Using this site
Low & Slow Ledger publishes barbecue cook logs for reference. By reading the site you accept these terms. If you do not accept them, the remedy is simply not to use the site.
The content is provided as it was recorded, at the time it was recorded, on the cooker named in each entry. Cookers, fuel, weather, altitude and meat vary. Nothing here is a guarantee that a method will behave the same way on your equipment.
Food safety and no professional advice
The temperatures, times and techniques described here are informational only and are not medical, dietary, or professional food-safety advice. Cooking and eating meat carries risk, including risk of foodborne illness.
Always verify doneness with a probe thermometer that you have checked in ice water and boiling water. Follow the food-safety guidance issued by your local authority. If you are pregnant, immunocompromised, feeding young children or elderly people, or handling game you have shot yourself, take specific advice rather than relying on a log here.
